Polyunsaturated fatty acids

Polyunsaturated fatty acids are the least saturated, with room for two or more pairs of hydrogen atoms. These oils have lower melting points, meaning they are liquid at room temperature. Most are not good for cooking rather they are ingested as dietary supplements.

Hemp
